About our pastry

We make high-end, all-natural, individual desserts. 

Our focus is on the needs (some might say "complaints") of the modern pastry chef, who has the impulse to create but not the resources (time, staff, etc.) to bake from scratch. We offer this chef the opportunity to use our clean-lined desserts as his or her palette to produce a beautiful, satisfying end to the meal or banquet. 

We have created this chef's palette with the finest ingredients: from Plugra® butter, Philadelphia® cream cheese and Callebaut® chocolates to all-fruit purees and Madagascar vanilla beans. The product tastes and looks as if the chef made the dessert from scratch. 

By developing this product for the pastry chef, we have given the all-natural world a rather unique category: the dessert that tastes great because it uses the best ingredients we can find - that happen to be all-natural - rather than starting with a design that needs to fit into a particular grocery category. 

Our love is not only for the food, but for its manufacture as well. We bring decades of manufacturing experience from other industries to guarantee our customers that the quality of the dessert - its look, its taste and its performance - is consistent from month to month, year to year and from product to product. We want to make the desserts the same way every time. We believe that the only way you get really good at doing that is by specializing in your product category. 

For this reason, we are intensely focused on creating individual desserts that answer the needs of the pastry chef about taste, consistency and cost.

We also make gourmet, all-natural chocolates for the kid in all of us. 

Our specialty is our Pearls. We have taken what was a stodgy old item in the candy world - the non-pareil - and made it a category of great tasting fun. We use Belgian chocolate and all-natural brightly colored Pearls seeds to give a better choice to the adult snacker or the parent who wants to give their child a genuinely fun and great tasting treat. 

We are, as far as we know, the world's only chocolate company that makes a chocolate bite filled with ganache. They are smooth, they are crunchy and we call them amazing
